385eaf1 introduced support for \sout.

I'm wondering why the strike element isn't used here. Looking at https://jats.nlm.nih.gov/extensions/bits/tag-library/2.2/element/strike.html / https://jats.nlm.nih.gov/archiving/tag-library/1.4/element/strike.html it seems like a better option.
