Add support for pandas >=2. 

As of this week, new versions of `dask`  no longer support `pandas < 2`, which has also just moved outside the rolling window for minimum supported dependencies of `xarray` (though they haven't started enforcing this). This just created installation headaches for Tess, it's probably not going to become less of a problem as time goes on.
