Observability: Testing new monitoring tools

The current observability setup relies on Sentry and CloudWatch, which is insufficient for our growing system needs. Monitoring is fragmented across multiple tools, making it hard to get a unified view of system performance, logs, and errors.

Test monitoring and observability for different providers:

1. Signoz
2. Grafana stack
3. Sentry
4. Open observe
