Currently, only Gemini-2.5-pro is supported for default STT. This is an issue as 2.5-pro will be deprecated soon and shows intermittent 503 errors.

- Add support for the latest models:
- Gemini-2.5-flash
- Gemini-3-flash
- Gemini-3.1-pro-preview
