While referencing the documentation in the wiki I realized things I see in action manifests on my system go beyond what is documented there. I am referencing the wiki for a manifest builder available in the next major version of EasyOpenVR that I am working on. The wiki page in question is Action Manifest.
Things I am not seeing in the wiki are listed below, this after collating fields from the aforementioned manifests I collected, which weren't many but already the discrepancies showed up which caused concern.
In the root:
localization_filesoptions with fields default, name and typesupports_dominant_hand_setting
In action_sets, I have seen these used, but not sure if they are official:
display_withforbidden_optionsrequired_options
In actions, again not sure if this is valid or not but it's not described:
