Create example for EKS Optimized AMI using EC2 Image Builder

EKS and ECS Team makes the scrips to create the official Amazon EKS/ECS-optimized AMI public available, so customers can use that to create their custom EKS/ECS-optimized AMI with custom hardening on top. However, it currently only supports Hashicorp Packer and customers are asking for EC2 Image Builder support, as the issue below:

I have an ambitious goal of creating an example of generating EKS Optimized AMIs using EC2 Image Builder using this module I created. I will be working on that once I have time, but also happy to collaborate with others from the community and accept PRs.
