Migrate from python3-fuse to maintained library / FUSE2 depreciation

python3-fuse was removed from Debian after FUSE 2.x support was dropped.

Is it possible to port gpiod-sysfs-proxy to a maintained FUSE python library ?

Looks like quite a lot of effort. FUSE 2 was removed from Debian (and looks like that might be the case for other distros too in future maybe) so that's something that needs to be thought about - should we upgrade this to FUSE 3 ?

Possibly https://github.com/libfuse/pyfuse3 could be a way forward, but it may need some API wrangling.
