Unpin linear-operator from jaxtyping 0.2.19

What the title says - do we need to be pinned to this? It is quite an old version by now.

I'm benchmarking optimisation software written in JAX, the library I use for does use some Ax platform functionalities, and it looks like my installation breaks because Ax requests gpytorch and linear-operator, with the latter still being pinned to jaxtyping 0.2.19. The optimisation software I work with requires newer versions of jaxtyping.

Looks like we don't need to be pinned to that. I removed it in my own fork.
Not opening a PR because three tests are failing, but they do so regardless of the jaxtyping version, so I assume that this is unrelated.
