Add unit tests which start with an xr.Dataset

There have been a few issues where people start with an xr.Dataset and then have trouble calling xrspatial function on top of xr.DataArrays which originate from an xr.Dataset.  Let's create a PR with reproduction tests for those scenarios and see if we can more robustly handle those input types
