Migrate Proof-of-Origin Token documentation to the wiki

The latest enhancement is being able to run this using deno inside the container.

Read and revise the current documentation and create a markdown document for use on the wiki. Incorporate the new service for running the token server inside the container.

We should include both docker run and docker compose examples.
