Model Metronome Data

This was split off from #633

• staging models in dbt
• add job to Squared to run staging
• refactor downstream models to use the new data in place of the current credit estimates

I moved this to blocked because it doenst look like we get usage data at the grain that I expected. It seems we only get invoices and credit grants so daily usage wouldnt be available currently. I asked in slack https://meltano.slack.com/archives/C05DZQ358BU/p1689952817071509

We could ask to start replicating all the event data, or use the tap to pull that from the API.
