Bump Quarkus Operator SDK to `7.2.3`

Microcks Operator is using an old version (6.9.3) of Quarkus Operator SDK that relies on Quarkus 3.1.7.8 and Java Operator SDK 4.9.0.

Java Operator SDK has since moved to 5.1, Quarkus Operator SDL has moved to 7.2.3 with Quarkus 3.27.1. Moreover, there were some big concept changes like: generalization of SSA (Server Side Apply), refactoring of EventSource and DependantResources, ...

All of this requires some heavy refactoring tasks.
