It would of course be incredible to get a full time lapse of such a trip. I was thinking the same thing. I see you listed Contour or GoPro as options for this. Unfortunately, these might not be the right tools for the task. Apparently they keep the battery on enough while doing a time lapse that you can only get a few hours max. You would think they could put in a long term mode that went low power for 29 seconds between taking shots.
For the GoPro you might be able to use a 3rd party controller that runs scripts like shutting down the camera after taking a shot. I'm not sure how long battery lasts for that. http://cam-do.com/GoProTimeController.html
Another option is one of the "life logger" widgets like http://memoto.com/. Though some of these are designed with "cloud" use in mind. I'm not sure if you can control all the data yourself.
