Better handling of long and wide skim results

There are multiple issues that relate to how skimr renders when the tibbles are really wide (wider than the page) or long (have a pagebreak in the middle). This happens in bookdown and rmarkdown when rendering.

I think that they are all the same underlying issue which is that we need to come up with ways to split things up (e.g. pagination).

The answer may be integration with gtable but I'm going to create a separate issue for this, since we can integrate with gtable for simpler cases. It maybe be that it solves the problem for the more complex cases but that remains to be seen.

gtsummary handles pagination but I'm not sure how far down the road of a specific implementation we want to go.
