implement Open Telemetry

To improve stability we need some improved monitoring and tracing. I would suggest setting up OTEL for all services (live, api and frontend)

Rust Backends could probably use some package which integrates with tokios `tracing` which we use for logging.

I have not yet checked out how to implement OTEL in next.js.
