[6.x] There's no `default` option in the blueprint builder for date fields

Bug description

It seems you can't clear a non required date field. After clearing it you initially see a Add date button but when you save the entry it'll default to the current date and it saves that when you resave again.

I'm struggling to reproduce this. What does the Date field look like in the blueprint's YAML file?

I know why you can't Duncan. It turns out theres default: now in the yaml. But this is not visible in the blueprint builder, which is why I hadn't seen this. So perhaps that's the issue here. There's no visible default option and therefore you can't clear it.
