docs(slack): swap demo video and add model choice to Capabilities#1259

Replace the Slack demo video with the updated clone-scene recording, and make model choice explicit: Factory is model-agnostic (any of 30+ models, no lock-in), with per-channel defaults and Factory Router auto-selection.
