This closes #406 and replaces the corresponding PR on veda-docs: NASA-IMPACT/veda-docs#254

As mentioned in the ticket:

The key for making sure the COG has the proper orientation is to flip the array itself on the y axis:

da = da.isel(lat=slice(None, None, -1))

The original code looks like it is flipping the latitude coordinate rather than the actual data variable array.

I'm not sure what the linting error is here: https://github.com/NASA-IMPACT/veda-data/actions/runs/18108734001/job/51529665452?pr=426 but it looks like it will resolve if pre-commit is run locally?
