Fix Brev link, OCR support matrix links, and Sphinx copyright strings
Summary
This change updates user-facing documentation to match current product links and fix broken-link reports.
Brev (docs/notebooks.md)
Replaces the “About Brev” pointer from docs.nvidia.com/brev/latest/about-brev.html with the NVIDIA developer landing page for Brev (https://developer.nvidia.com/brev).
Support matrix (docs/support-matrix.md)
Updates OCR-related entries so they point to the NeMo Retriever extraction support matrix instead of the older NIM image-OCR 1.2.1 path.
Adds explicit lines for NVIDIA NIM for Image OCR (baidu/paddleocr) and NeMo Retriever OCR, each with the same extraction support-matrix URL.
Sphinx metadata (docs/conf.py)
Removes stray single-quote characters in the copyright line and in the copyright variable so the rendered footer and file header read correctly (e.g. 2025– without extra quotes).
