Rename Splice Wallet Kernel references to Wallet Gateway#352

The Splice Wallet Kernel project has been renamed to Wallet Gateway upstream, and the repository moved from hyperledger-labs/splice-wallet-kernel to canton-network/wallet-gateway. This updates user-facing prose, headings, link text, and frontmatter titles to match. Sync-pipeline tracking markers (COPIED_START source paths, image paths, and snippet imports) are intentionally left unchanged; renaming those requires a coordinated change in the upstream sync script.
