docs: align references with Stack 1.0

Summary

• regenerate the CLI reference from the released stash 1.0.0 manifest
• add telemetry and document the current EQL, deployment, and workspace-switching surfaces
• align Quickstart, Drizzle, Supabase Edge, EQL, solutions, and agent skills with Stack 1.0
• pin generated Stack, Supabase, Drizzle, and Prisma API references to their published 1.0 tags
• clear the resolved EQL and Supabase wrapper release blockers in IA.md

The six placeholder-page rewrites are intentionally excluded for a follow-up PR.
