Update workshop exercise test files to align with incremental learning objectives.
The original test files were comprehensive, designed for the final state of the workshop. This PR prunes them for earlier exercise steps (01.advanced-tools, 02.elicitation, and 03.sampling.simple) to ensure tests only cover features introduced up to that specific step, providing clearer guidance for learners and ensuring problem tests fail helpfully.
