First attempt at adding UV instead of pip...
NB. uv seems fine, and works. Only flaw seems to be something around upgrading all dependencies which isn't enabled yet. There are simple workarounds. Dependabot supports it as well. It might also promote better developer practices as it keeps the pyproject.toml file maintained.
