docs(oidc-auth): Clarify some docs regarding oidc-auth

I ran into some problems during development that took a bit of time to workaround. There's nothing wrong with the code but I think this will save future developers a lot of time.

The author should do the following, if applicable

• Add tests
• Run tests
• yarn changeset at the top of this repo and push the changeset
• Follow the contribution guide
