Implements #779, plus some refactoring.
Kotlin 2.2.21 (latest)
JDK 17 (in progress - OrientDB fails with it ATM)
All deps upgraded to their latest
And the central catch-all map is split into multiple models, as per their concerns.
This part is ongoing, since that's a lot of work.
