Improve Storybook organization via component cateogrization.

Also updates, ai prompts, guidelines, checklists and templates to incorporate story categorization.
Note: these are my initial ideas for how we can categorize things. Happy to change the folder/prefix names or move things around if others have input. We can also force an order of the sections in the left rail menu if we'd like.
