Snowflake is purely a cloud hosted service; so, we can't have docker containers for testing; thus, I did all the testing using mocking which meant I added the mockk lib which necessitated minimizing java at 11 rather than 1.8. IDK if that's too aggressive for any repo users?
We have about double this in additional ktorm extensions, but I wanted to not overwhelm.
