In this PR the Airflow version is upgraded to the latest 2.7.3, which will require the Python version upgrade to 3.8.18 since this is the version that the new Airflow system runs. Additionally, the Helm Chart will require an upgrade

I confirm that I have added:

  • A comment to every Dockerfile with information about target repository and tag (version).
  • Filled in readme on dockerhub and in this repo about how to build the image if some extra steps should be done.
