chore: update walletconnect dependencies to latest versions

Description

Updates all @walletconnect/* dependencies from 2.23.2 to 2.23.5 across the monorepo. This aligns with the latest versions published in WalletConnect/walletconnect-monorepo@b2d55c6 ("chore: version packages").

Packages updated (2.23.2 → 2.23.5):

• @walletconnect/types
• @walletconnect/utils
• @walletconnect/sign-client
• @walletconnect/universal-provider
• @walletconnect/ethereum-provider

27 package.json files updated across packages/, apps/laboratory/, and examples/. The pnpm-lock.yaml has been regenerated.
