docs(README): automatize & link TOC

Description

• Improve the readability of the table of contents.
• Use links to provide direct access to specific sections of the README.
• Enable automatic generation of the TOC (Table of Contents).

This ensures the table of contents remains accurate and up to date.

Additional

• The TOC is automatically generated using the following plugin: https://github.com/yzhang-gh/vscode-markdown
• Unfortunately, the main header is included in the TOC. This limitation is already discussed here: Exclude heading from toc globally yzhang-gh/vscode-markdown#723
