Upgrade Vue plugin with the Vite 8 bump
Updating vite to ^8.0.7 without also updating @vitejs/plugin-vue leaves an unsupported peer-dependency pair: the lockfile resolves @vitejs/plugin-vue@5.2.4, which declares vite support only for ^5 || ^6. This creates an invalid dependency graph and can break install/build steps in CI or local environments that enforce peer consistency, so the plugin should be bumped to a Vite-8-compatible release in the same commit.
